Best Ever Chocolate Chip Banana Bread (Gluten-free and Nut-free)

This is the best-ever banana bread you'll ever make! I speak highly of it because I'm a HUGE banana bread lover. As a kid, I would eat traditional banana bread made with white flour. I've created a healthy version that tastes just as good. This is the recipe I make all the time for my family. For a printable version of this recipe: https://www.joyoushealth.com/398-recipe-chocolate-chip-banana-bread Recipe: 1/2 cup coconut flour 1/2 cup brown rice flour* 1 tsp baking powder 1 tsp baking soda 1 tsp ground cinnamon 1/4 tsp ground nutmeg 2 bananas mashed** 1/4 cup real maple syrup 1/3 cup melted coconut oil or extra-virgin olive oil 4 eggs, whisked 1/2 cup semi-sweet chocolate chips Preheat oven to 350°F (180°C). Grease a standard size loaf pan well or line with parchment paper. Combine the coconut flour, brown rice flour, baking powder, baking soda, cinnamon and nutmeg in a large bowl and mix together. In a separate bowl combine the bananas, oil, maple syrup and eggs together. (Make sure the melted coconut oil isn’t too hot otherwise it will cook the egg when you combine everything.) Add the banana mixture to the flour mixture and combine well. Fold in chocolate chips. Pour the mixture into loaf pan and bake for 35–40 minutes until a fork inserted comes out clean. You may want to cover the bread the last 10 minutes with some tin foil to prevent it from burning. Refrigerate for up to 5 days or freeze for up to 3 months. *You can sub any other flour for the brown rice flour, except more coconut flour because then you have to change the liquid ingredients since coconut flour absorbs so much moisture. **Can't eat bananas?     @patrickzielinski63863 years ago So I've measured 78g of coconut oil. My mixture seemed a lot more liquid than what was portrayed in the video, I wasn't sure if I had added too much melted coconut oil, but it seemed reasonable. In any case, after 40 minutes in the oven I got myself a really nice, soft banana bread. I'm going to try to switch a portion of the brown rice flour for almond flour for fun next time. And maybe I'll omit an egg-white or two if I get a sloppy mixture again. I'd also like to try and sift the flour and blend the wet ingredients to see how it affects the final incorporation.
    Oh and I ended up putting the dry ingredients into the wet ones, I'll try doing it in reverse as you did next time before making any changes. Thanks Joy.
